Rescue Recipe: Crock Pot Tacos
August 5th, 2012By the Welcome Baby Care Doulas
This one’s a time saver and takes maybe 5 minutes of actual labor.
Ingredients:
-About 1/5-2 pound steak or beef roast…go with what’s on sale, as it will be highly seasoned and shredded.
-1.5 cups of chicken or beef broth
-5 tablespoons taco sauce
-1 tsp. cumin
-1 tablespoon chopped jarred garlic OR 1 tsp. garlic powder
- Cook in crockpot on high for at least 4 hours.
- Shred meat in juices with fork.
- Serve with soft tortillas or hard shells, and your favorite fixings.
Doula Tip: Throw this together just as you get baby down for a nap. Easy. Great thing about this recipe is that the moist meat is forgiving and can sit on low, covered for quite a while if it’s just one of those days or if baby is having the all-too-common fussy period which conveniently tends to cover the dinner hour!
