Brrrr! It’s cold out there. What a winter! We’re thinking of the new mamas out there all cooped up, recovering, and discovering. To all of our gorgeous families hunkering down, avoiding COVID, the flu and RSV, and fervently watching the calendar, we offer this restorative soup — perfect for this time of caution and quarantine.
Root veggies, lemon, much needed liquids…perfect for postpartum and beyond. This is a big batch that will feed you all week!
Ingredients:
- 8 cups water
- ¾ cup olive oil
- 1 cup lentils, presoaked in water for 4 hours
- 4 cups fresh spinach, coarsely chopped
- 2 cups lemon juice
- 2 Tbsp. chopped garlic
- 2 sweet potatoes, cubed
- 2 purple potatoes, cubed
- ½ large yellow onion, chopped
- 1 Tbsp. salt
- ½ Tbsp. ground black pepper
Let’s put it together;
Easy. Bring water to boil, add lentils and simmer for 5-7 minutes. Add everything else, lower the heat and cook for 20 – 30 minutes until lentils are soft. Garnish with sliced lemon and fresh herbs, if you wish!
