All hail the avocado! Delicious, decadent, fresh, and completely worthy of the title “Superfood.” Health benefits include: blood pressure control, lower (yes, really!) cholesterol, eye health, and anti-aging. For postpartum women, I especially LOVE the avocado’s anti-inflammatory properties and that they help increase nutrient absorption. That’s right, avocados help the body absorb certain nutrients, including lycopene and beta carotene. The best source of lycopene? Tomatoes! Guacamole anyone?
Beyond avocado and tomato, my guacamole contains fresh garlic and lime. Both wonderfully restorative for the new mom.
Guacamole is not only a health-booster, but a mood-booster as well. It’s a celebratory food. It’s tasty. It’s fun. With chips, chicken, veggies, or eggs, I love making this dip for my clients.
Ingredients:
3 ripe avocados
1-2 large tomatoes
1 tablespoon fresh chopped garlic
1/4 cup chopped red onion
3 tablespoons lime juice
1/2 one jalapeño, deseeded and diced (if you want)
salt and pepper to taste
Easy, easy, can’t mess this up:
Coarsely mash avocados with fork.
Stir in lime juice, chopped garlic, salt and pepper thoroughly.
Gently fold in tomatoes (diced) and onions.
