Doulas love to leave a plate of muffins for the postpartum family. Feeds them for a week, feels like a treat. In honor of the approaching apple season, here’s one of my faves:
Muffin Batter Ingredients:
- -2 cups flour
- –1 teaspoon baking powder
- -½ teaspoon baking soda
- -½ teaspoon salt
- –½ cup butter
- -1 cup white sugar
- -2 eggs
- -1 teaspoon vanilla
- -2 cups chopped apples (I prefer tart green.)
Strudel Topping Ingredients:
- -1½ tablespoons butter
- -¼ teaspoon cinnamon
- -½ cup packed brown sugar
- -1½ tablespoons flour
How to:
- -Preheat oven to 375°.
- -Grease a 12 cup standard muffin pan.
- -Mix together 2 cups flour, baking powder, baking soda, and salt.
- -In a separate bowl, beat together batter portions of butter, sugar, and eggs until smooth.
- -Mix in vanilla.
- -Stir in the apples and gradually blend in the flour mixture. Spoon mixture into the prepared pan.
- -In a small bowl, mix brown sugar, flour, and cinnamon. Cut in butter to make crumbs. Sprinkle over tops of the wet muffin mixture in the pan.
- -Bake approximately 20 minutes and check with a toothpick or fork.
- -Cool and enjoy!
