Postpartum Recipes: Apple Strudel Muffins

Doulas love to leave a plate of muffins for the postpartum family. Feeds them for a week, feels like a treat. In honor of the approaching apple season, here’s one of my faves:

Muffin Batter Ingredients:

  • -2 cups flour
  • 1 teaspoon baking powder
  • -½ teaspoon baking soda
  • -½ teaspoon salt
  • ½ cup butter
  • -1 cup white sugar
  • -2 eggs
  • -1 teaspoon vanilla
  • -2 cups chopped apples (I prefer tart green.)

Strudel Topping Ingredients:

  • -1½ tablespoons butter
  • -¼ teaspoon cinnamon
  • -½ cup packed brown sugar
  • -1½ tablespoons flour

How to:

  • -Preheat oven to 375°.
  • -Grease a 12 cup standard muffin pan.
  • -Mix together 2 cups flour, baking powder, baking soda, and salt.
  • -In a separate bowl, beat together batter portions of butter, sugar, and eggs until smooth. 
  • -Mix in vanilla.
  • -Stir in the apples and gradually blend in the flour mixture. Spoon mixture into the prepared pan.
  • -In a small bowl, mix brown sugar, flour, and cinnamon. Cut in butter to make crumbs. Sprinkle over tops of the wet muffin mixture in the pan.
  • -Bake approximately 20 minutes and check with a toothpick or fork. 
  • -Cool and enjoy!
