Monday Morning Muffins (A Low Labor Treat For Labor Day)

Here’s what was cooking in my kitchen for the last day of summer break.  I always recommend muffins and breads to my clients (if I can’t be there to make them myself).  For about 20 minutes of light prep and 30-40 in the oven, you have breakfast for a week…unless you leave the fresh batch out on the counter, as I did this morning.  Now there’s only 4 left!  Good for one more meal or snack, anyway.

Ingredients:

  • 3 over ripe mashed bananas
  • 1/4 cup honey
  • 1/3 cup milk
  • 2 cups all purpose flour
  • 1 egg
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

 

I don’t fuss with separation of wet and dry ingredients.  I dump it all in the bowl (minus the chocolate chips) and beat with the electric mixer on high.  Mix until moist and relatively lump free.  Stir in chips.  Bake for 30 min. at 400.  Easy!
