Postpartum Recipe: Blueberry Pancakes

We recommend making a double batch on Sunday morning  and freezing leftovers for yummy, quick toaster breakfasts for the next week or two. New moms and pops often forget to eat OR they plan to eat, even sit down to do so, and are interrupted by the baby. Think ahead and make things easy!

Ingredients:

  • -2 large eggs
  • -1¼ cups milk
  • -2 teaspoons vanilla 
  • -3 tablespoons melted butter 
  • -1½ cups all purpose flour
  • -½ teaspoon salt
  • -2 teaspoons baking powder
  • -1 tablespoons sugar
  • -¾ cup blueberries

Mix dry ingredients, add wet; sprinkle blueberries on top of the cooking pancakes just after pouring the batter. Enjoy!
