Quinoa is the new “it” superfood: good fats, tons of protein, packed with nutrients, and loaded with fiber. We love feeding new mamas good, nutritious food!
This recipe is tasty and extremely versatile. You can eat it plain–hot or cold, with chips, with avocado, or with cheese.
Throw it All Together!
- 2-3 boiled chicken breasts: chopped to desired consistency and cooked in taco seasoning
- 1 cup (uncooked) quinoa–cooked per directions
- 2 cans sweet corn
- 2 cans black beans
- 1-2 cups salsa of choice
- 1-2 Tbsp. lime juice
- Fresh cilantro
This makes a big batch and super easy leftovers–perfect for the new mom!
