LOVE kale. So springy, so yummy, so healthy! Soup, as followers of our blog well know, is our number one choice for postpartum super food! Ladle up!
- 6 cups fresh kale, julienned and tightly packed
- 1 cup chopped yellow onion
- 1 clove garlic, minced
- 1 tsp. onion powder
- 3 16-oz. cans red kidney beans, not drained
- 2 14½-oz. can sodium-free whole tomatoes, chopped (reserve juice)
- 1 15-oz. can garbanzo beans, not drained
- 1 14½-oz. can sodium free, low-fat chicken broth
1. Combine all ingredients, including bean and tomato juices, in a large Dutch oven or stock pot. Bring to a boil over medium heat.
2. Reduce heat to low, cover, and simmer for 1 hour. Serve hot.
