Postpartum Recipes: Kale and Bean Soup

LOVE kale. So springy, so yummy, so healthy! Soup, as followers of our blog well know, is our number one choice for postpartum super food! Ladle up!

  • 6 cups fresh kale, julienned and tightly packed
  • 1 cup chopped yellow onion
  • 1 clove garlic, minced
  • 1 tsp. onion powder
  • 3   16-oz. cans red kidney beans, not drained
  • 2   14½-oz. can sodium-free whole tomatoes, chopped (reserve juice)
  • 1   15-oz. can garbanzo beans, not drained
  • 1   14½-oz. can sodium free, low-fat chicken broth

1.  Combine all ingredients, including bean and tomato juices, in a large Dutch oven or stock pot. Bring to a boil over medium heat.

2.  Reduce heat to low, cover, and simmer for 1 hour. Serve hot.
