Postpartum Recipes: Pomegranate and Goat Cheese Salad

Eat your greens, Mamas! This batch serves 3-4.

Salad:

  • -4 cups washed baby spinach
  • -½ cup whole pecans, unsalted
  • -½ cup pomegranate seeds
  • -½ cup goat cheese, crumbled
  • -1 cup seedless red grapes, halved
  • ½ red onion, julienned 
  • -1 red bell pepper, chopped

Dressing:

  • (Whisk together.)
  • -¼ cup olive oil
  • -3 Tbsp. apple cider vinegar
  • -2 Tbsp. pure honey
  • -½ tsp. salt
  • ½ tsp. rosemary
  • -cracked black pepper to taste

Toss and enjoy!
