Postpartum Recipes: The Ubiquitous Kale Chip

You’ve heard women mumbling about them in the produce aisle. You’ve seen mention of them float by on your Facebook feed. Kale chips.

Kale chips, kale chips, kale chips. Very trendy, this kale. We’ve even professed our affection here on the blog.

You need your leafy greens! But sometimes it’s hard to cozy up to a salad when you just want to snack. What are these kale chips you ask? Do they really scratch the potato/tortilla/pita itch? They do! Sorta…only you’ll feel good about feeding your body leafy greens instead of packaged, processed starch (although there is a time and a place for Salt and Vinegar Kettle Chips, of course).

Here’s my easy, yummy kale chips recipe.

  • -preheat oven to 350º
  • -take one small package of baby kale, washed and dried and tossed in:   ¼ c. olive oil, 2 Tbsp. lemon juice, 1 tsp. garlic salt, onion powder and black pepper to taste.
  • -bake for about 30 min., flipping once.
